测定PDI在衡量大豆制品中蛋白质的变性程度及评价其质量起着重要作用,近来、我国不少单位也进行了这项测定,但缺乏统一的仪器和方法。本文介绍的是采用国产仪器进行PDI测定的一种方法,此法较接近A.O.C.S.规定,测得数据重复性较好,可使测定PDI成为一般油厂和实验室的常规分析手段。
