以天然淀粉制备的多元醇葡糖苷与脂肪酸或脂肪酸甲酯为原料制备多元醇葡糖苷脂肪酸酯，考察了不同的合成方法，测定了制得的产品性能。这类表面活性剂具有较低的表面张力和相当好的乳化性能。
