在营养强化米的研究中,制定各种营养剂的科学配方及其配制工艺条件是重要的。作者对营养剂的配方和在配制中各种营养剂的溶解度、稳定性、药物配伍禁忌以及为改善强化米的色、香、味等进行了试验研究,为我国食品的营养强化提供了理论依据和技术途径。
