从苋色藜 (ChenopodiumAmaranticolor)的愈伤组织中提取天然红色素 .此色素对热较敏感 ,对紫外线不敏感 ,在 pH 5～ 1 0稳定 ,Fe3 、Cu2 和氧化剂对其有破坏作用 ,Fe2 、Al3 和还原剂有一定的保护作用 .比较MS和B5 培养基 ,前者对苋色藜愈伤组织产色素有利 .
