分析了近年来中国果品和蔬菜生产、流通、贮藏的概况,指出中国果蔬生产虽然跃居世界前列,但也隐含危机,必须注意市场容量,减少因贮藏处理不当引起的重大损失.解决果蔬贮藏问题,不能盲目追求造价高、能耗大的高精尖技术,应推广成本低、效果好的果品蔬菜贮藏保鲜方法.同时介绍了作者在这方面进行的“利用自然冷源的果蔬保鲜贮藏技术”、“高压静电保鲜技术”以及“利用电解离子水的果蔬保鲜和病害防治研究”的成果.
