采用阿拉伯木聚糖(AX)和海藻酸钠(SA)复合包埋植物乳杆菌,并评价包埋的植物乳杆菌在人工胃液和高胆盐溶液中存活率,胃肠液的释放特性及常温储藏的稳定性。实验表明:相比SA包埋,2%AX与SA复合包埋的包埋活菌数提高14.6倍,模拟胃液处理2 h后,SA包埋的L. plantarum活菌数下降3.4个对数值,6%AX与SA复合包埋的活菌数下降1.94个对数值,活菌数提高1.46个对数值;高胆盐溶液中处理4 h后,SA包埋的L. plantarum活菌数下降2.2个对数值,6%AX与SA复合包埋的活菌数下降1.12个对数值,活菌数提高1.08个对数值;在小肠模拟释放中,复合包埋体系能显著延缓植物乳杆菌的释放;室温存储2个月后,相较单用SA包埋,AX与SA复合包埋显著提高了活菌存活率。由以上结果可知,AX与SA复合包埋能显著提高植物乳杆菌的活菌数。

英文摘要:

In this researchL. Plantarum,a probiotic bacterium,was encapsulated in the beads made from arabinoxylan(AX) and sodium alginate(SA) by the extrusion technique. The survival rate of microencapsulatedL. Plantarumin simulated gastric juice and bile salt solution was evaluated,and the release of encapsulatedL. Plantarumand the storage stability of encapsulatedL. Plantarumat room temperature were also studied. The results indicated that the incorporated beads could improve entrapment efficiency. Compared with SA encapsulatedL. Plantarum,the number of survival cells of AX and SA encapsulatedL. Plantarumin the simulated gastric juice and high bile salt solution increased 1.46 and 1.08 log respectively. The incorporated beads decrease bacteria release rate in simulated upper gastrointestinal tract conditions and enhanced the storage stability. This study presents a good encapsulation system that protects probioticL. Plantarumduring exposure to adverse environment conditions.
